dog food (not literally)
Regular Dog Food
Ingredients
• approximately 1lb steak
• 1/4 cup heavy cream
• 1-2 slices of white American cheese
• salt and pepper are optional
• something to oil the pan (butter is fine)
Procedure
Slice the steak up into roughly 1/2 inch cubes.
Add 1-2 tsp of salt and pepper directly to the meat.
Heat an oiled pan over low to medium heat, and brown the meat cubes. If the meat sears and sticks to the pan, that's fine, just free it and keep stirring, later those bits will end up in the gravy.
Move the cubes out of the pan and into a bowl and add the 1/4 cup of cream directly to the pan along with any drippings collected from cooking the meat.
Bring to a simmer, kill the heat, drop the white American cheese directly into the cream and stir until dissolved.
Allow the contents of the pan to cool enough that a light skin forms over the gravy, then stir the gravy and pour it over the cubed meat and serve.
This recipe works well with those far-too-lean trimmed marinating or braising steaks that go on sale at the local market. On their own they just don't have enough fat and they're not very satisfying, but use the drippings, cream, and a little cheese, and you get something that's more like cream of mushroom soup with chunks of meat in it. I thought it looked like dog food from commercials that played during my childhood, so I decided to call the recipe that, but with fewer words.
Gourmet Dog Food

• 1/4 cup cottage cheese
• 1/4 cup sour cream
• 1-2 slices of white American cheese
• salt and pepper are optional
• something to oil the pan (butter is fine)
Procedure
Slice the steak up into roughly 1/2 inch cubes.
Add 1-2 tsp of salt and pepper directly to the meat.
Heat an oiled pan over low to medium heat, and brown the meat cubes. If the meat sears and sticks to the pan, that's fine, just free it and keep stirring, later those bits will end up in the gravy.
Leave the cubes of meat in the pan.
Pour the 1/4 cup of cream directly over the meat, add the 1/4 cup cottage cheese, add the 1/4 cup sour cream, and stir thoroughly to eliminate any clumping.
Bring the pan back up to a simmer, kill the heat, remove the pan from the heat, and add the slices of cheese on top. Allow it to cool for 2-3 minutes, then stir the cheese in, spoon the contents into a bowl and wait another 5-10 minutes before pouring the remaining gravy over the top of the meat in the bowl.
The Gourmet Dog Food, versus the regular Dog Food, will have a flavor that is less dominated by the American cheese and it will be a little thicker and creamier. I thought it was simply an improvement on the Dog Food recipe, but among my taste testers there are some that prefer the regular and some that prefer the gourmet. So they remain distinct.
