home-made mayonaise

Ingredients

• 1 raw egg
• 1 tbsp vinegar
• 1 tbsp mustard
• 1 cup of avocado oil

Lemon juice can be used as a substitute for vinegar, but i prefer the flavor of vinegar. The amount of vinegar or lemon juice can be tailored to suit personal tastes, but be careful not exceed too much or the emulsification will fail and it will become a pleasant smelling but oily soup instead of whipping up properly. Similarly, the amount of mustard can be modified to taste.

Procedure

Put the ingredients into a tall and thin container for liquid -- ideally only wide enough to fit the emersion blender. A glass liquid measuring cup or recycled pickle jar works well here.

Submerge the blender all the way to the bottom, with the egg beneath it. Start blending on low to medium speed, but do not raise the blender until a creamy white cloud emerges from beneath it. This usually happens within a few seconds. Then slowly move the blender towards the surface in an up and down motion, but no more than an inch or two at a time. Wait for the area beneath the blender to be fully blended. Repeat this up and down approach and work towards the top. Simply moving the blender up and down the full of the mixture without waiting for the bottom to blend can result in a failed emulsification. Sometimes this can be remedied by waiting for the materials to separate and then blending again, or adding another egg.

If a substitution is needed for the oil, it's best to pick one that doesn't contain linoleic acid. While oxidized linoleic acid is absolutely safe to consume, the commercial processing that produces most linoleic-acid-containing oils renders them unsafe for consumption. Vegetable oil (rapeseed/canola) is right out. I would also caution against using olive oil as it can contain up to 25% linoleic acid (vs oleic acid which is otherwise not harmful).

Safety issues aside, for best taste, Avocado oil really is ideal because of its mild flavor. Other oils will drastically change the flavor of the outcome.
