Switching-day and bottling day
A goodbye to Big Tech and a hello to bottling cider
The past couple of months, a campaign called "Danmark Skifter" - Denmark Switcing - has been running as a grass-roots effort in Denmark to help people move away from Big Tech and American tech in general. People signed up for newsletters and were sent what is essentialle whitepapers about European alternatives to Big Tech services. It's been very popular, but I've already switched almost all of my personal tech stack away from commercial American software, so I've been passively observing.
Until yesterday, that is, where a series of events were held around the country to help people switch. So I spent 3 hours down at Dokk1 - a huge and beautiful public library in Aarhus - helping people move to different emails, download alternative browsers, and switch to e.g. open source navigation apps. It was fun and nice to meet the other volunteers, and, of course, the people coming to get help.
From switching day to bottling day
This morning I got up early and started to bottle the last of this season's cider. I've been brewing cider for about 5 years now, when we moved to this house and I discovered just how many apples I had access to. I press my cider in october-november and then leave it to slowly ferment outside on the northern side of the house for the winter. Then, around this time of the year, I bottle the cider with some priming sugar and then it undergoes secondary fermentation and conditions for a couple of years.

I do three different types of cider:
- An apple champagne on pure Belle de Boskoop apples with EC1118 and oak chips
- An apple rosé on Discovery and Red Aroma apples with natural yeast and added crab apple juice
- A sweeter cider on Belle de Boskoop using Nottingham Ale yeast and back sweetened with erythritol
This year I've got about 60-70 champagne bottles, which is actualy quite a lot of cider. Have to give some away to get it drunk :)
Other life events
As the spring comes, much of the time I had for doing computer stuff goes into other pursuits. Gardening, hanging out with the kids, going on trips - that sort of thing. Not sure how much time I will be spending on developing new stuff - but I did buy a LilyGo T-Deck Plus which I plan to flash with RatDeck (https://github.com/ratspeak/ratdeck) turning it into a standalone Reticulum node. It's a really cool project, so I hope some of you check it out. Also, I want to add comments to blog posts - that would be neat!

Thanks! I love dry cider, but it's been hard to find in Denmark. These days it's becoming more popular, but expensive still, and I can make it for free with a better result than what I buy...
